Easy Breakfasts

Over Night Oats

  • Steel cut oats - fill any container

  • Unsweetend plant milk (Ex. Silk Organic Soymilk) or Flaxmilk — enough to cover the oats + inch or so

  • Tablespoon of honey (adjust but dont go crazy) or maple syrup (the real kind, preferably dark)

  • Spices - ceylon (true) cinnamon, vanilla, cardamom (seeds or ground), allspice (if you like)

  • Let this soak overnight

Chia Seed Pudding

  • Unsweetend plant milk (Ex. Silk Organic Soymilk) or Flaxmilk — 2 cups, bring to a simmer

  • 1 smashed over ripe banana, stir in

  • Tablespoon of honey (adjust but dont go crazy) or maple syrup (the real kind, preferably dark)

  • Spices (optional) - ceylon (true) cinnamon, vanilla, cardamom (seeds or ground), allspice (if you like), cocoa powder or nibs

  • ~1/2 cup chia seeds, stir in

  • Eat warm or chill in the fridge

Tofu Scramble

  • Firm tofu (from fridge or freeze)

  • Squish out as much water as you can

  • Crumble and put in pan with some olive oil - remove some of the water

  • Optional - splash of tamari (clean soy sauce) or worchestershire

  • Add diced onion and bell pepper, miced garlic if you want

  • Spices (add toward end, doesnt need to cook much) - onion and garlic powder, paprika, smoked paprika (light), nutritional yeast, black pepper, ‘braggs 24’, oregano (whatever you like)

Quinoa flakes (breakfast cereal) or purple corn grits

Savory

  • Make as directed (you can use tea instead of water)

  • Top with green onion

  • Mild Chili Chili Oil

  • Sautee onions and red/orange bell peppers

  • Pinch of salt (tiny), lots of black pepper

  • Splash of worchesterchire (optional)

Sweet

  • Roast walnuts, peacans, cashews, hazelnuts (golden)

  • Ground flax (best to grid them yourself and save alot of money and fresher)

  • Tablespoon of honey (adjust but dont go crazy) or maple syrup (the real kind, preferably dark)

  • Spices - ceylon (true) cinnamon, vanilla, cardamom (seeds or ground), allspice (if you like)

  • Banana or dried cranberries and raisins

Yogurt Parfait

  • Plant based yogurt (coconut or cashew)

  • Dried Goji berries

  • Roast walnuts, peacans, cashews, hazelnuts (golden)

  • Tablespoon of honey (adjust but dont go crazy)

  • Fruit - Mango, papaya, berries

  • Optional: Ground flax (best to grid them yourself and save alot of money and fresher)

Congee

  • Yesterdays white rice

  • 4-6 cups of veggie stock (or I just use dandilion root tea and sometimes add other teas like lemon balm, add some onion/garlic powder, dried shitakes)

  • Little splash of roasted sesame oil (optional)

  • Diced onion, diced carrot

  • Let it simmer for awhile

  • Add veggies - chunks of carrot, mushrooms, celery, kale (simmer a little longer)

  • Furikake (black & white sesame seeds, seaweed flakes)

  • Top with Green onion and splash of tamari

Avocado Toast

  • Ezekiel bread (you can keep it frozen or in fridge), i like the flax (yellow) or the sesame seed (green)

  • Smash some avocado, add some lime and tiny bit of salt, cumin

  • Marinated (or fresh) purple onion diced on top

  • Cilantro, red pepper flakes

  • Optional - Little bit of feta (being a little bad)

“Fancy Toast”

Ezekiel bread (you can keep it frozen or in fridge), i like the flax (yellow) or the sesame seed (green) —- sometimes use Dave’s instead (high amount of omega and other whole grains, no weird stuff in ingredients)

Sweet

  • Nutzo (or other clean only nut ingredient nut butter)

  • Roasted walnuts/pecans

  • Ground flax/chia seeds/hemp seeds

  • Banana

Savory

  • Tahini - black and/or regular

  • Toppings (spices) - cayenne, nutritional yeast, tumeric, garlic powder, black pepper, oregano or marjoram

  • Toppings (veggies) - green onion, cilantro, parsley, sliced raddishes, peppers of any kind, tomato, thin purple onion (or marinated purple onion - stick some slices in a jar with a few kinds of vinegar, a little salt, a crushed garlic clove and/or red pepper flakes)
